Distillery bottling, 40% a.b.v.
Jackson writes, “Austere, stonily dry, aromatic.” It is hard to conceive a much better description than this. Intensely, nearly overwhelmingly perfumed, especially with a splash of water. Very herbal and aromatic. Palate is dry and reminiscent of a very dry white whine. Firm, with a good bit of smoke in the finish. Exquisitely balanced. Appetizing.
Suggested for: Aperitif, but complex enough to be enjoyed long after dinner
